I'm the type of person who can't have a rest day or I'll completely derail from a workout schedule. When I was in college and had time to work out daily, I alternated different types of workouts to give parts of my body a rest. M, W, F were cardio (elliptical or stationary bike) and weights days, T, Th were endurance swimming days and weekends were for yoga or an outdoor fun activity. I never had any muscle/joint problems and very quickly got into shape while actually enjoying myself.

And don't forget the power of a professional massage!

For some people, exercise every day is fine. I think rest days are probably more important when you start from scratch - you're more likely to injure yourself and don't know how to listen to your own body at that stage.
